- Heat a large cast iron skillet over high heat and add canola oil. Allow it to warm up until shimmering, indicating it's ready.
- Lower the heat to medium-high, add the diced Yukon Gold potatoes with salt, and sauté for about 6 minutes until golden brown and tender.
- Remove potatoes and set aside. Add ground beef to the skillet, breaking it apart, and sauté until browned, around 5-7 minutes.
- Push beef to one side and add diced yellow onion. Cook for about 3 minutes until softened, then stir in red bell pepper for an additional 2-3 minutes.
- If excess grease is present, drain it away. Return potatoes to the skillet, mixing gently with beef and vegetables.
- Add Worcestershire sauce, ketchup, liquid smoke, Dijon mustard, smoked paprika, garlic powder, oregano, kosher salt, and ground black pepper. Stir and cook for an additional 6-8 minutes.
- Taste and adjust seasonings if necessary. Serve garnished with freshly chopped parsley.
