Step-by-Step Instructions
  1. Heat a large cast iron skillet over high heat and add canola oil. Allow it to warm up until shimmering, indicating it's ready.
  2. Lower the heat to medium-high, add the diced Yukon Gold potatoes with salt, and sauté for about 6 minutes until golden brown and tender.
  3. Remove potatoes and set aside. Add ground beef to the skillet, breaking it apart, and sauté until browned, around 5-7 minutes.
  4. Push beef to one side and add diced yellow onion. Cook for about 3 minutes until softened, then stir in red bell pepper for an additional 2-3 minutes.
  5. If excess grease is present, drain it away. Return potatoes to the skillet, mixing gently with beef and vegetables.
  6. Add Worcestershire sauce, ketchup, liquid smoke, Dijon mustard, smoked paprika, garlic powder, oregano, kosher salt, and ground black pepper. Stir and cook for an additional 6-8 minutes.
  7. Taste and adjust seasonings if necessary. Serve garnished with freshly chopped parsley.
