Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat, then add in 1 diced onion and 2 cloves of minced garlic; sauté for about 2-3 minutes until translucent.
  3. Stir in 2 cups of chopped zucchini and 1 cup of diced bell peppers; cook for 5-7 minutes until starting to soften.
  4. Add 1 can of rinsed chickpeas along with 1 teaspoon of paprika, salt, and pepper; cook for another 2-3 minutes.
  5. Pour the mixture into a greased casserole dish, spreading it evenly.
  6. Sprinkle 1-2 cups of shredded cheddar cheese on top of the casserole mixture.
  7. Bake in the oven for 20-25 minutes until the cheese is golden and bubbly.
