Cooking Steps
  1. In a large pot, warm the olive oil over medium heat.
  2. Add the diced onion, bell pepper, and minced garlic, sauté until onion is translucent.
  3. Stir in the cumin, thyme, allspice, and paprika, cook for a minute.
  4. Add the long-grain white rice, toss with sautéed vegetables for 2 minutes.
  5. Pour in coconut milk and vegetable broth, stir to combine.
  6. Increase heat to bring to a gentle boil, then reduce to simmer.
  7. Cover and let simmer for 15-20 minutes until rice is tender.
  8. Gently stir in the rinsed black and kidney beans, season with salt and pepper.
  9. Simmer for an additional 5-10 minutes, covered.
  10. Fluff the rice with a fork and serve hot, garnished with cilantro if desired.
