  • 1 tablespoon Butter Adds a lovely richness, but feel free to omit for a lighter option.
  • 1 pound Chicken Thighs The star ingredient, providing juicy flavor; chicken breast is a lean alternative.
  • 1/2 large Onion Offers aromatic depth; switch with red or yellow onion if preferred.
  • 1 each Bell Peppers (red, orange, yellow) Brings sweetness and crunch; any color mix will do!
  • 4 cloves Garlic Infuses the soup with flavor; garlic powder is a handy substitute.
For the Broth

  • 1 can Diced Green Chiles (4 oz.) Infuses a mild kick; replace with jalapeños for a spicier version.
  • 1 can Crushed Tomatoes (14 oz.) Forms the flavorful broth base; feel free to use fresh diced tomatoes instead.

Method

Cooking Instructions
  1. In a large Dutch oven, heat 2 tablespoons of olive oil and add 1 tablespoon of butter over medium-high heat. Once the butter is melted and bubbling, add 1 pound of diced chicken thighs and ½ a large onion, sautéing for about 3 minutes until the chicken is lightly browned and the onion is translucent.
  2. Next, toss in 1 each of red, orange, and yellow bell peppers, along with 4 minced garlic cloves. Stir continuously for about 1 minute until the peppers start to soften, releasing their vibrant colors and flavors. Then, sprinkle in 2 tablespoons of flour and your spices—1 teaspoon each of salt, chili powder, and ground cumin—cooking for an additional 2 minutes to combine and deepen the flavors.
  3. Pour in 4 cans of low sodium chicken broth (14.5 oz each), along with 1 can of rinsed black beans, 1 can of diced green chiles, 1 can of crushed tomatoes, and ¾ cup of uncooked long-grain white rice. Stir everything well, bringing the mixture to a gentle simmer.
  4. Let the Chicken Fajita Soup gently simmer on low heat for about 30 minutes. Stir occasionally to prevent the rice from sticking and ensure even cooking.
  5. Remove the Dutch oven from heat and stir in 1 cup of freshly grated pepper jack cheese until melted and creamy. If the soup appears too thick for your preference, gradually add additional broth or water until you reach your desired consistency.
  6. Ladle the Chicken Fajita Soup into bowls and top with your choice of garnishes like crispy tortilla chips, fresh cilantro, a dollop of sour cream, and avocado slices. Enjoy this comforting dish warm!
