Step-by-Step Instructions for Spicy Dragon Chicken
  1. In a large bowl, combine sliced boneless skinless chicken with egg white, cornstarch, salt, and black pepper. Let marinate for 10-15 minutes.
  2. Heat 1 inch of vegetable oil in a skillet over medium-high heat. Fry the marinated chicken in small batches for 4-6 minutes until golden and crispy.
  3. In the same skillet, reduce heat, add sesame oil, sauté garlic, ginger, and dried chilies for 1-2 minutes. Stir in ketchup, soy sauce, chili garlic sauce, vinegar, and sugar. Simmer for 2-3 minutes.
  4. Add the fried chicken back into the skillet with the sauce, toss to coat. Simmer on slightly higher heat for 1 minute.
