For the Cookie Dough
  • 1 cup Freshly squeezed orange juice
  • 1/2 cup Olive oil Can be swapped with sunflower oil
  • 1 cup Honey
  • 1/4 cup Water
  • 1 cup Sugar
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground clove
  • 1/4 teaspoon Ground nutmeg Freshly grated gives the best impact
  • 1 teaspoon Vanillin powder or vanilla extract
  • 1 tablespoon Orange zest
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1 cup Fine semolina
  • 2 cups All-purpose flour
For the Syrup
  • 1 cup Sugar
  • 1/2 cup Honey
  • 1/2 cup Water
  • 1 stick Cinnamon stick
  • 2 Cloves
  • 1 strip Orange peel
For Garnishing
  • 1/2 cup Ground walnuts

Method
 

Instructions
  1. In a large mixing bowl, combine freshly squeezed orange juice, olive oil, honey, water, and sugar. Stir until the sugar dissolves completely, about 2-3 minutes.
  2. Sprinkle in ground cinnamon, ground clove, ground nutmeg, and vanilla. Gradually incorporate fine semolina, followed by all-purpose flour and baking powder, mixing until you achieve a soft, cohesive dough.
  3. Cover the bowl with a clean kitchen towel and let it rest for about 30 minutes.
  4. In a medium saucepan, combine sugar, honey, and water along with a cinnamon stick, whole cloves, and an orange peel. Bring to a gentle boil, stirring until the sugar has fully dissolved. Allow to boil for 4 minutes, then remove from heat.
  5. Take small portions of dough and roll them into oval shapes, about the size of a golf ball. Flatten each ball slightly and create a criss-cross pattern on top with a fork or fingers.
  6. Arrange the shaped cookies on prepared baking sheets, leaving space for expansion. Bake for approximately 20 minutes, or until they turn a light golden brown.
  7. Remove the trays from the oven and immediately dunk each warm cookie into the prepared syrup for several seconds, then let them rest on a cooling rack.
  8. Drizzle with extra honey and sprinkle with ground walnuts. Serve warm or at room temperature.
