  • 2 cups Sweet Potatoes diced

  • 2 tablespoons Lime Juice freshly squeezed

  • 1/4 cup Fresh Cilantro chopped
  • 1 cup Cheese Cheddar or dairy-free
  • 1/2 cup Greek Yogurt optional for topping

Method
 

Step-by-Step Instructions
  1. Heat a large skillet over medium heat and add a splash of olive oil. Once hot, add diced sweet potatoes and sauté for about 8-10 minutes until tender and lightly browned.
  2. Add drained and rinsed black beans along with your choice of rice to the skillet. Stir well to combine all ingredients for about 2 minutes.
  3. Pour in approximately 2 cups of vegetable broth and sprinkle in your spices. Mix well and bring to a gentle simmer.
  4. Cover the skillet with a lid and reduce the heat to low, cooking for about 20-30 minutes until the rice is tender.
  5. Once the rice is cooked, remove from heat and stir in freshly squeezed lime juice and chopped cilantro.
  6. Optionally, add cheese on top and broil for about 1-2 minutes until bubbly and lightly browned.
