For the Eggs
  • 4 large Eggs Fresh is best for poaching.
For the Garnish
  • 1 medium Avocado Can substitute with sour cream or Greek yogurt.
  • 1/4 cup Cilantro Fresh herbs enhance flavor.
  • 1/4 cup Scallions Feel free to substitute with parsley.

Method
 

Step-by-Step Instructions
  1. Heat the oil in a large cast iron skillet over medium heat until it shimmers.
  2. Sauté chopped shallots for about 3 minutes until translucent, then add minced garlic and red chile flakes, cooking for another minute.
  3. Pour in canned tomatoes, pinto beans, epazote, cumin, and salt. Simmer for about 10 minutes, stirring occasionally.
  4. Create wells in the sauce and crack fresh eggs into them. Cover and cook on low heat for about 10 minutes until the whites are set.
  5. Remove from heat and garnish with avocado, salt, pepper, cilantro, and scallions before serving.
