- Prepare the Seasoning Mix: In a small mixing bowl, combine salt, pepper, onion powder, garlic powder, and oregano. Stir until well mixed and set aside.
- Season the Chicken: Pat the whole chicken dry with paper towels and rub the seasoning mix all over.
- Assemble the Ingredients in the Pot: Place seasoned chicken at the bottom of a large pot. Layer in red bell peppers, celery, onion, carrots, garlic, potatoes, diced tomatoes, parsley, chicken bouillon, and enough water to cover.
- Bring to a Boil and Simmer: Bring to a boil over medium-high heat. Reduce heat to medium-low, cover partially, and simmer for about 2 hours.
- Shred the Chicken: Remove chicken from pot, allow to cool for 15-20 minutes, shred meat from bones, and return to the pot.
- Thicken the Soup: Cook ditalini pasta separately (if using) and mash some potatoes in the soup for thickness.
- Final Seasoning and Serve: Taste and adjust seasoning, add cooked ditalini pasta if using, stir and let simmer for a few more minutes.
