Ingredients
  

For the Soup
  • 1 whole Chicken ensure the giblets are removed
  • 1 medium Yellow Onion can substitute with shallots
  • 2 sticks Celery omit if necessary
  • 2 medium Carrots substitute with parsnips if desired
  • 1 large Red Bell Pepper any sweet bell pepper can be used
  • 2 medium Russet Potatoes use any type of firm potato or sweet potatoes
  • 1 can Diced Tomatoes fresh tomatoes can be used, adjust cooking times
  • 1 bunch Italian Parsley for garnish and flavor
  • 3 cloves Garlic can exclude for a garlic-free version
  • 8 cups Chicken Broth homemade or store-bought
  • 1 cube Chicken Bouillon use vegetable bouillon for a vegetarian variation
  • 4 cups Water adjust based on desired thickness
For Seasoning
  • 1 tsp Salt adjust to taste
  • 1 tsp Pepper use black pepper or increase spice level
  • 1 tsp Onion Powder can substitute with fresh onions
  • 1 tsp Garlic Powder use fresh minced garlic for a fresher taste
  • 1 tbsp Oregano try marjoram or Italian seasoning as a swap
For Adding Texture
  • 1 cup Ditalini Pasta can be omitted for gluten-free or substitute with rice/quinoa

Step-by-Step Instructions
  1. Prepare the Seasoning Mix: In a small mixing bowl, combine salt, pepper, onion powder, garlic powder, and oregano. Stir until well mixed and set aside.
  2. Season the Chicken: Pat the whole chicken dry with paper towels and rub the seasoning mix all over.
  3. Assemble the Ingredients in the Pot: Place seasoned chicken at the bottom of a large pot. Layer in red bell peppers, celery, onion, carrots, garlic, potatoes, diced tomatoes, parsley, chicken bouillon, and enough water to cover.
  4. Bring to a Boil and Simmer: Bring to a boil over medium-high heat. Reduce heat to medium-low, cover partially, and simmer for about 2 hours.
  5. Shred the Chicken: Remove chicken from pot, allow to cool for 15-20 minutes, shred meat from bones, and return to the pot.
  6. Thicken the Soup: Cook ditalini pasta separately (if using) and mash some potatoes in the soup for thickness.
  7. Final Seasoning and Serve: Taste and adjust seasoning, add cooked ditalini pasta if using, stir and let simmer for a few more minutes.
