Step-by-Step Instructions
  1. In a large zip-top bag, combine lime juice, lime zest, olive oil, honey, chopped cilantro, kosher salt, and black pepper to create a flavorful marinade. Add the thin-sliced boneless skinless chicken breasts to the bag, ensuring they are well-coated. Seal the bag tightly and refrigerate for at least 30 minutes, or up to 8 hours for the best flavor.
  2. About 10 minutes before you’re ready to cook, preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
  3. Remove the chicken from the marinade, allowing any excess to drip off. Place the chicken breasts on the grill and cook for about 5 minutes without moving to achieve beautiful grill marks. Flip the chicken and cook for another 5 minutes or until the internal temperature reaches 165°F.
  4. Once cooked, carefully remove the chicken from the grill and discard the marinade. Let the chicken rest for a couple of minutes before plating. Garnish with extra cilantro and lime wedges.
