Cooking Instructions
  1. Begin by heating 2 tablespoons of canola or vegetable oil in a large cast iron skillet over medium-high heat.
  2. Add 1 pound of ground beef to the hot skillet, breaking it up with a spatula as it cooks, and stir in 2 cloves of minced garlic. Let it brown for about 3-5 minutes.
  3. In a measuring cup, whisk together ⅓ cup of soy sauce, ¼ cup of orange juice, 2 tablespoons of brown sugar, 2 tablespoons of sweet chili sauce, 1 tablespoon of toasted sesame oil, and 1 tablespoon of cornstarch until smooth.
  4. Pour the prepared sauce over the browned beef in the skillet, stir to combine, lower the heat, and let it simmer for about 3-4 minutes.
  5. In a serving bowl, combine a portion of the cooked ground beef (about ¼ of the mixture) with ½ cup of cottage cheese, ½ cup of edamame, and slices of cucumber.
  6. Top your bowl with pickled red onions, sliced green onions, and a sprinkle of toasted sesame seeds.
