Preparation Steps
  1. In a large skillet, heat the breakfast sausage over medium heat for about 5-7 minutes, breaking it apart until browned and fully cooked.
  2. Using the same skillet, add the frozen diced potatoes and cook on medium-high heat for approximately 8-10 minutes, stirring occasionally.
  3. In a medium bowl, whisk together the eggs, milk, salt, and pepper until thoroughly combined and frothy.
  4. Return your skillet to the heat and melt a tablespoon of butter over low to medium heat. Pour in the egg mixture and cook for about 3-4 minutes, stirring gently.
  5. Briefly warm the flour tortillas in a skillet or microwave for about 20-30 seconds until pliable.
  6. To each warmed tortilla, add a generous portion of crispy sausage, golden potatoes, scrambled eggs, and a handful of cheese. Sprinkle with chopped green onions if desired.
  7. Carefully fold in the sides of each tortilla and roll them tightly from the bottom to create a secure wrap. Serve warm with a side of salsa.
