Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9x13-inch casserole dish with nonstick spray.
- In a large skillet over medium heat, brown the ground beef for about 6-8 minutes, adding chopped onion halfway through.
- Stir in minced garlic, cook for another minute, then add enchilada sauce, black beans, and green chiles.
- Spread a thin layer of enchilada sauce in the casserole dish, layer tortillas, beef mixture, and cheese.
- Repeat layering two more times, finishing with remaining tortillas, sauce, and cheese.
- Cover with foil and bake for 30-35 minutes, then remove foil and bake an additional 5 minutes.
- Allow to cool for a few minutes before garnishing with avocado, tomato, cilantro, and jalapeño.
