Filling
  • 1 lb Ground Beef Can substitute with ground turkey
  • 1 Yellow Onion
  • 2 cloves Garlic Use fresh for best flavor
  • 2 cups Enchilada Sauce Homemade is recommended
  • 1 can Black Beans Can substitute with pinto or kidney beans
  • 1 can Green Chiles Jalapeños can be used for extra spice
Layers
  • 10 Flour or Corn Tortillas
  • 2 cups Shredded Cheddar Cheese Monterey Jack is a great substitute
  • 1 cup Shredded Monterey Jack Cheese
Garnish
  • 1 Avocado Sour cream can be a substitute
  • 1 tbsp Lemon Juice Lime juice works well too
  • 1 Diced Tomato Can substitute with cherry tomatoes
  • 1/4 cup Chopped Cilantro Parsley can replace if needed
  • 1 Minced Jalapeno Adjust to heat preference

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13-inch casserole dish with nonstick spray.
  2. In a large skillet over medium heat, brown the ground beef for about 6-8 minutes, adding chopped onion halfway through.
  3. Stir in minced garlic, cook for another minute, then add enchilada sauce, black beans, and green chiles.
  4. Spread a thin layer of enchilada sauce in the casserole dish, layer tortillas, beef mixture, and cheese.
  5. Repeat layering two more times, finishing with remaining tortillas, sauce, and cheese.
  6. Cover with foil and bake for 30-35 minutes, then remove foil and bake an additional 5 minutes.
  7. Allow to cool for a few minutes before garnishing with avocado, tomato, cilantro, and jalapeño.
