- Preheat your oven to 350°F (175°C). Adjust the oven racks for broiling later on.
- In a medium ovenproof skillet, pour in olive oil and heat over medium. Add sliced scallions and a pinch of salt. Sauté for 2-3 minutes until softened.
- Fold in frozen corn and Tajin seasoning. Sauté for another 3-5 minutes until corn is heated and tender.
- Incorporate the cream cheese into the corn mixture and stir until fully melted and blended.
- Remove from heat and fold in sour cream and ¾ of the grated Cotija cheese until smooth.
- Transfer the skillet to the oven and bake for 10-12 minutes until bubbly and slightly brown.
- Switch to broil, sprinkle remaining Cotija cheese on top and broil for 2-3 minutes until golden brown.
- Garnish with reserved scallion pieces and chopped cilantro, if desired. Serve warm with tortilla chips or veggies.
