For the Dip
  • 2 tablespoons Extra Virgin Olive Oil Can substitute with avocado oil.
  • 6 whole Scallions, thinly sliced Keep dark green portion for garnish.
  • 16 ounces Frozen Corn Kernels 3 cups fresh can be used.
  • 1 teaspoon Tajin Seasoning Use chili powder as a substitute if necessary.
  • 4 ounces ⅓ Less Fat Cream Cheese Regular cream cheese may also be used.
  • ¼ cup Light Sour Cream Greek yogurt can be a great alternative.
  • 7 ounces Cotija Cheese, grated Can use feta cheese as a substitute.
  • Chopped Fresh Cilantro Optional based on personal preference.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Adjust the oven racks for broiling later on.
  2. In a medium ovenproof skillet, pour in olive oil and heat over medium. Add sliced scallions and a pinch of salt. Sauté for 2-3 minutes until softened.
  3. Fold in frozen corn and Tajin seasoning. Sauté for another 3-5 minutes until corn is heated and tender.
  4. Incorporate the cream cheese into the corn mixture and stir until fully melted and blended.
  5. Remove from heat and fold in sour cream and ¾ of the grated Cotija cheese until smooth.
  6. Transfer the skillet to the oven and bake for 10-12 minutes until bubbly and slightly brown.
  7. Switch to broil, sprinkle remaining Cotija cheese on top and broil for 2-3 minutes until golden brown.
  8. Garnish with reserved scallion pieces and chopped cilantro, if desired. Serve warm with tortilla chips or veggies.
