For the Salad Base
  • 2 cups broccoli slaw can substitute with other slaw mixes
  • 1 cup shredded carrots substitute with more slaw or any crunchy vegetable
  • 1 medium red bell pepper can use yellow or orange bell peppers
  • 1 medium cucumber zucchini can be an interesting substitution
  • 2 cups shredded chicken use rotisserie chicken for convenience
  • ½ cup sliced almonds substitute with peanuts or sunflower seeds
  • 2 tablespoons green onions can substitute with chives or shallots
  • ¼ cup cilantro fresh parsley is a good alternative
For the Dressing
  • ¼ cup soy sauce use low-sodium for a healthier option
  • 2 tablespoons brown sugar honey or maple syrup can be substitutes
  • 1 lime juice lemon juice can also be used
  • 2 tablespoons rice vinegar apple cider vinegar can work in a pinch
  • 2 tablespoons olive oil can substitute with avocado oil
  • 1 teaspoon sesame oil use sparingly or replace with more olive oil
  • 1 tablespoon peanut butter almond butter or tahini can be used

Method
 

Preparation Steps
  1. In a large mixing bowl, combine 2 cups of broccoli slaw, 1 cup of shredded carrots, 1 diced red bell pepper, 1 chopped cucumber, 2 cups of shredded chicken, and ½ cup of sliced almonds. Toss gently until evenly distributed.
  2. In a medium bowl, whisk together ¼ cup of soy sauce, 2 tablespoons of brown sugar, the juice of 1 lime, 2 tablespoons of rice vinegar, 2 tablespoons of olive oil, 1 teaspoon of sesame oil, 1 tablespoon of peanut butter, and 1 finely minced garlic clove. Mix until well-combined.
  3. Drizzle the prepared dressing over the salad base and gently toss until all components are well coated. Garnish with sliced green onions and fresh cilantro. Serve immediately.
