Preparation Steps
- In a large mixing bowl, combine 2 cups of broccoli slaw, 1 cup of shredded carrots, 1 diced red bell pepper, 1 chopped cucumber, 2 cups of shredded chicken, and ½ cup of sliced almonds. Toss gently until evenly distributed.
- In a medium bowl, whisk together ¼ cup of soy sauce, 2 tablespoons of brown sugar, the juice of 1 lime, 2 tablespoons of rice vinegar, 2 tablespoons of olive oil, 1 teaspoon of sesame oil, 1 tablespoon of peanut butter, and 1 finely minced garlic clove. Mix until well-combined.
- Drizzle the prepared dressing over the salad base and gently toss until all components are well coated. Garnish with sliced green onions and fresh cilantro. Serve immediately.
