Step-by-Step Instructions for Sage Butternut Squash Gratin
- Preheat your oven to 400°F (200°C). Gather your ingredients and equipment.
- Peel and slice butternut squash into thin half rounds, about 1/4 inch thick.
- Melt 2 tablespoons of butter in a small saucepan over medium heat. Add 1 minced shallot and 2 cloves of minced garlic; sauté for 1-2 minutes.
- Whisk in 2 tablespoons of flour to form a roux. Gradually add 2 cups of vegetable stock and stir until slightly thickened, about 3-4 minutes.
- Stir in 1 cup of heavy cream, 1 teaspoon of onion powder, and 6-8 sage leaves until mixed.
