Step-by-Step Instructions for Sage Butternut Squash Gratin
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and equipment.
  2. Peel and slice butternut squash into thin half rounds, about 1/4 inch thick.
  3. Melt 2 tablespoons of butter in a small saucepan over medium heat. Add 1 minced shallot and 2 cloves of minced garlic; sauté for 1-2 minutes.
  4. Whisk in 2 tablespoons of flour to form a roux. Gradually add 2 cups of vegetable stock and stir until slightly thickened, about 3-4 minutes.
  5. Stir in 1 cup of heavy cream, 1 teaspoon of onion powder, and 6-8 sage leaves until mixed.
  6. Grease a 9 x 13-inch baking dish with butter, pour in 1/3 of the creamy sauce, and sprinkle a layer of grated Parmesan cheese.
  7. Layer butternut squash slices over the sauce, slightly overlapping. Pour remaining cream mixture over the squash.
  8. Cover the dish with parchment paper and foil. Bake for 20 minutes.
  9. Remove cover, sprinkle additional Parmesan cheese, and bake uncovered for another 10 minutes.
  10. Let rest for a few minutes, then garnish with chopped chives before serving.
