For the Gnocchi
  • 16 ounces Gnocchi Soft potato dumplings
For the Sauce
  • 1 head Roasted Garlic Roast until soft
  • 4 tablespoons Butter Adds richness
  • 1 cup Parmesan cheese, grated Add more for serving
  • Salt Adjust to taste
  • Black pepper Add to taste
For Garnish
  • Fresh parsley Optional

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C). Prepare the garlic by slicing off the top and drizzling it with olive oil. Wrap in foil and roast for 30-35 minutes until soft.
  2. Bring a large pot of salted water to a boil. Add the gnocchi and cook for 2-3 minutes until they float to the surface. Reserve pasta water before draining.
  3. Squeeze the roasted garlic cloves into a smooth paste. In a skillet, melt the butter and add the mashed garlic, cooking for 1-2 minutes.
  4. Add the cooked gnocchi to the skillet and toss gently to coat. Add reserved pasta water if needed.
  5. Stir in the grated Parmesan cheese until melted. Season with salt and black pepper as desired.
  6. Plate the gnocchi, garnish with parsley and extra Parmesan.
