Cooking Steps
- Preheat your oven to 400°F (200°C). Prepare the garlic by slicing off the top and drizzling it with olive oil. Wrap in foil and roast for 30-35 minutes until soft.
- Bring a large pot of salted water to a boil. Add the gnocchi and cook for 2-3 minutes until they float to the surface. Reserve pasta water before draining.
- Squeeze the roasted garlic cloves into a smooth paste. In a skillet, melt the butter and add the mashed garlic, cooking for 1-2 minutes.
- Add the cooked gnocchi to the skillet and toss gently to coat. Add reserved pasta water if needed.
- Stir in the grated Parmesan cheese until melted. Season with salt and black pepper as desired.
- Plate the gnocchi, garnish with parsley and extra Parmesan.
