  • 1 pound Carrots Choose small, thin carrots for optimal roasting.
  • 1 can Chickpeas Rinse and thoroughly dry for maximum crispiness.
  • 2 tablespoons Olive Oil Divide for both carrots and chickpeas.
  • 1 teaspoon Cumin Seeds Ground cumin can be used as an alternative.

For the Marinated Feta
  • 1 small Shallot Swap with red onion if shallots are not available.
  • 1 small Fresno Chile Use jalapeño for a milder twist if preferred.
  • 2 tablespoons Red Wine Vinegar Apple cider vinegar can substitute.
  • 4 ounces Feta Cheese Drain and pat it dry for best results.
  • 1 tablespoon Fresh Oregano Dried herbs can be used if fresh is not available.
  • 1 tablespoon Fresh Mint Dried herbs can be used if fresh is not available.

Step‑by‑Step Instructions
  1. Preheat your air fryer to 400°F (200°C).
  2. In a large bowl, combine the rinsed and thoroughly dried chickpeas with 1 tablespoon of olive oil, 1/2 teaspoon of cumin seeds, and a sprinkle of kosher salt and pepper. Toss together until coated.
  3. Prepare the carrots in the same bowl with remaining olive oil, cumin seeds, salt, and pepper. Toss until well coated.
  4. Add the seasoned carrots to the air fryer basket with the chickpeas and cook for an additional 15-17 minutes, shaking the basket halfway.
  5. Mix chopped shallot, diced Fresno chile, red wine vinegar, crumbled feta, fresh oregano, and mint in a separate bowl for the marinated feta.
  6. Once cooked, transfer the roasted mixture to a serving plate and top with the marinated feta.
