For the Balsamic Reduction

Step-by-Step Instructions
  1. Preheat your oven to 400ºF (200ºC).
  2. Trim and halve the Brussels sprouts, ensuring they are arranged in a single layer on a large sheet pan.
  3. Drizzle Brussels sprouts with olive oil, sprinkle with salt and pepper, and toss to coat.
  4. If using pancetta, sprinkle it over the Brussels sprouts.
  5. Roast in the oven for about 20 minutes, tossing halfway through.
  6. While the sprouts roast, simmer balsamic vinegar in a small saucepan until it thickens.
  7. Once roasted, drizzle balsamic reduction over the sprouts and toss to coat.
  8. Transfer to a serving bowl and enjoy immediately.
