  • 2 medium Cucumbers seedless preferred
  • 1 ripe Avocado
  • 1 cup Plain Greek Yogurt (full-fat) can substitute with regular yogurt
  • 0.5 cup Cold Water adjust for desired consistency
  • 1 teaspoon Dried Dill or fresh dill for more flavor
  • 1 teaspoon Garlic Powder or fresh minced garlic, start small
  • 1 each Lemon Zest and Juice adjust to taste
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Gather all ingredients. Peel and chop cucumbers, cube avocado, measure yogurt, and zest and juice lemon.
  2. In a blender, combine chopped cucumbers, cubed avocado, Greek yogurt, and cold water.
  3. Add dried dill, garlic powder, and lemon zest/juice. Blend until creamy.
  4. Check consistency. Add more cold water if needed, blend until smooth.
  5. Transfer soup to a bowl, chill in the refrigerator for at least 30 minutes.
  6. Stir before serving, garnish with fresh dill, olive oil, or cucumber slices.
