  2. Transfer the coarsely chopped blueberries into a mixing bowl. Next, dice your ripe peaches and add them along with fresh lemon juice, chopped parsley, diced red bell pepper, maple syrup, and a pinch of salt. Stir to mix evenly.
  3. Taste the salsa to check for sweetness and balance. If you prefer a sweeter profile, add a bit more maple syrup and stir thoroughly.
  4. Cover the mixing bowl with plastic wrap or transfer the salsa to an airtight container. Refrigerate for at least 30 minutes before serving to enhance flavor.
