  • 1 cup Grape Tomatoes Can be swapped with cherry tomatoes.
  • 1 cup Mini Cucumbers Regular cucumbers can be used.
For the Flavor Boost
  • 1/2 cup Parmesan Cheese Feta can be used for a tangy twist.
  • 1/2 cup Italian Dressing (Olive Garden) Homemade dressing can be used.

Method
 

Cooking and Mixing
  1. Cook the pasta in salted boiling water for 9-10 minutes until al dente. Drain and rinse with cold water.
  2. Combine cooled pasta with diced avocados, red onions, grape tomatoes, and mini cucumbers in a large mixing bowl.
  3. Drizzle Italian dressing over the mixture and gently toss to coat evenly.
  4. Sprinkle Parmesan cheese on top and toss again to mix without mashing the avocados.
  5. Add black pepper if desired, cover, and chill in the refrigerator for at least 2 hours before serving.
