  • 12 oz Bow Tie Pasta or rotini or macaroni
  • 1 lb Cooked Shrimp poached or grilled
  • 14 oz Marinated Artichoke Hearts or canned artichokes
  • 1/2 cup Sliced Ripe Olives black olives work too
  • 4 oz Crumbled Feta Cheese or goat cheese
  • 2 scallions Green Onions or chives
  • 1/4 cup Fresh Parsley or cilantro
  • 1/4 cup Fresh Basil dried basil can work
For the Dressing
  • 3 tbsp White Wine Vinegar or apple cider vinegar
  • 1/2 cup Olive Oil or avocado oil
  • 2 tbsp Lemon Juice or lime juice
  • 1 tbsp Dijon Mustard or whole grain mustard
  • to taste Fresh Ground Pepper

Method
 

Preparation Steps
  1. Cook pasta in a large pot of salted boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, combine the cooled pasta, cooked shrimp, marinated artichoke hearts, olives, feta cheese, green onions, parsley, and basil. Toss gently.
  3. Whisk together the dressing ingredients: vinegar, olive oil, lemon juice, mustard, and pepper until emulsified.
  4. Pour the dressing over the salad and toss to coat evenly.
  5. Cover and refrigerate for at least 2 hours to allow flavors to meld.
