For the Fish
  • 4 filets Rainbow Trout can substitute with catfish, sole, or flounder
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoons Cornstarch or Arrowroot Flour or other flours as substitute
For Cooking
  • 2 tablespoons Olive Oil for sautéing
  • 1 tablespoon Unsalted Butter adds richness
For the Almondine Sauce
  • ½ cup Sliced Almonds provides crunch
  • 1.5 tablespoons Lemon Juice about 1½ tablespoons
  • ¼ cup Parsley chopped
  • 2 tablespoons Capers drained

Preparation Steps
  1. Pat the rainbow trout filets dry, season with salt and pepper, and dust with cornstarch or arrowroot flour.
  2. Heat olive oil and butter in a skillet, cook trout skin-side down for 3-4 minutes, flip, and cook for another 2-3 minutes.
  3. In the same skillet, melt remaining butter, add sliced almonds and toast for 2-3 minutes until golden brown.
  4. Remove from heat, add lemon juice, parsley, and capers to the almonds, and stir gently to combine.
  5. Serve the trout on plates and drizzle with the almondine sauce, garnish with parsley if desired.
