  • 1 teaspoon Paprika For smokiness and color. Replace with smoked paprika for additional flavor.
  • 1 teaspoon Cumin Adds warmth and depth. Use coriander as a mild alternative.
  • 0.5 teaspoon Kosher Salt Enhances all flavors. Adjust to taste according to dietary needs.
  • 0.125 teaspoon Ground Black Pepper Adds spice. Freshly ground is preferred.
For the Wrap
  • 2 large Flour Tortillas Wraps the ingredients together. Use gluten-free tortillas as an alternative.

Method
 

Cooking Instructions
  1. Heat the olive oil in a large sauté pan over medium heat for about 30 seconds.
  2. Add minced garlic and diced onion to the pan. Sauté for 1-2 minutes until the onion is translucent.
  3. Fold in the packed spinach and sauté for another 1-2 minutes until wilted.
  4. Stir in the drained black beans and corn. Cook for 5-6 minutes, stirring occasionally.
  5. Lower heat, add paprika, cumin, kosher salt, and ground black pepper. Mix in shredded cheese until melted.
  6. Wrap flour tortillas in a damp paper towel and steam in the microwave for 20 seconds.
  7. Place a steamed tortilla on a plate, scoop filling into the center, aiming for about ⅓ of the mixture.
  8. Fold in the sides of the tortilla and tightly roll it up from the bottom to the top.
  9. Serve warm with hot sauce, lime juice, or salsa verde.
