Ingredients
  

For the Stir-Fry
  • 400 grams Jumbo King Prawns Fresh for best flavor, can substitute with chicken or beef
  • 250 grams Egg Noodles Fresh or dried noodles
  • 4 cloves Garlic Fresh cloves preferred
  • 1 medium Onion Yellow or white
  • 1 medium Carrot Julienned; can substitute with snap peas or bell peppers
  • 1 medium Bell Pepper Diced; can substitute with zucchinis or broccoli
  • 2 tablespoons Vegetable Oil Can use sesame oil
For the Chow Mein Sauce
  • 3 tablespoons Soy Sauce Low-sodium options available
  • 2 tablespoons Shao Xing Wine Substitute with dry sherry if unavailable
  • 1 tablespoon Sugar Brown sugar can be used
  • 1 tablespoon Sesame Oil Can substitute with olive oil

Method
 

Cooking Instructions
  1. Season the jumbo king prawns with salt, black pepper, and Shao Xing wine. Let marinate for 10 minutes.
  2. Cook the egg noodles in boiling water according to package instructions, then drain and toss with oil.
  3. Combine soy sauce, Shao Xing wine, sugar, and sesame oil in a bowl to make the chow mein sauce.
  4. Heat vegetable oil in a wok and stir-fry the marinated prawns for 2-3 minutes until pink.
  5. Remove prawns, add more oil, sauté garlic until fragrant, then add onions, carrots, and bell pepper. Stir-fry for 1 minute.
  6. Add cooked noodles and chow mein sauce to the vegetables, mix well, and stir-fry for 2-3 minutes.
  7. Return the prawns to the wok, toss with chopped spring onions and bean sprouts, and warm through.
  8. Serve the Prawn Chow Mein on plates and enjoy your meal!
