- Season the jumbo king prawns with salt, black pepper, and Shao Xing wine. Let marinate for 10 minutes.
- Cook the egg noodles in boiling water according to package instructions, then drain and toss with oil.
- Combine soy sauce, Shao Xing wine, sugar, and sesame oil in a bowl to make the chow mein sauce.
- Heat vegetable oil in a wok and stir-fry the marinated prawns for 2-3 minutes until pink.
- Remove prawns, add more oil, sauté garlic until fragrant, then add onions, carrots, and bell pepper. Stir-fry for 1 minute.
- Add cooked noodles and chow mein sauce to the vegetables, mix well, and stir-fry for 2-3 minutes.
- Return the prawns to the wok, toss with chopped spring onions and bean sprouts, and warm through.
- Serve the Prawn Chow Mein on plates and enjoy your meal!
