Step-by-Step Instructions
  1. Preheat your oven to 350°F (180°C) and line two baking trays with parchment paper.
  2. In a large mixing bowl, cream together softened unsalted butter and granulated sugar for about 2-3 minutes until light and fluffy.
  3. Add the large egg and vanilla extract, continuing to beat until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just incorporated.
  5. Drop portions of dough onto the prepared trays, spaced about 2 inches apart.
  6. Press a well-drained pineapple ring onto the center of each cookie dough mound and sprinkle with additional sugar.
  7. Bake for 11-13 minutes until edges are golden and cookies are set in the center.
  8. Remove from oven, cool for 5 minutes on trays, then transfer to a wire rack to cool completely.
