  1. In a large mixing bowl, combine chilled coconut milk with honey and vanilla extract. Stir vigorously for about 1-2 minutes until smooth and creamy.
  2. Add chia seeds to the bowl and gently stir. Let it sit for 15 minutes at room temperature, stirring occasionally.
  3. Blend frozen pineapple in a blender for 1-2 minutes until thick and smooth. Taste and add honey if desired.
  4. Layer a spoonful of pineapple puree at the bottom of serving glasses.
  5. Pour the thickened chia pudding over the pineapple puree without disturbing it.
