Step-by-Step Instructions
  1. In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes until smooth. Add chicken and marinate for at least 30 minutes.
  2. Chop fresh pineapple, red bell pepper, and onion. In another bowl, combine with cilantro, jalapeño, lime juice, and salt. Refrigerate for at least 15 minutes.
  3. Heat olive oil in a skillet over medium-high heat. Add marinated chicken and cook for 5-7 minutes per side until browned and cooked through. Let rest before slicing.
  4. Warm tortillas in a dry skillet or microwave until pliable.
  5. Assemble tacos by placing cabbage in tortillas, adding chicken, and topping with pineapple salsa and optional toppings.
  6. Serve immediately while warm, with extra lime wedges and toppings on the side.
