Dough
  • 4 cups flour all-purpose or bread flour
  • 2 teaspoons yeast active dry or instant
  • 1/4 cup sugar brown sugar can be used
  • 1 teaspoon salt
  • 1 cup milk lukewarm, can substitute almond milk
  • 1 large egg or substitute with flaxseed/applesauce for vegan
  • 1/2 cup butter unsalted
Filling
  • 3 cups peaches fresh or thoroughly drained frozen
  • 1/2 cup brown sugar
  • 2 teaspoons cinnamon Ceylon cinnamon for subtle flavor
Glaze
  • 8 ounces cream cheese dairy-free alternative can be used
  • 2 cups powdered sugar
  • 2 tablespoons milk

Method
 

Preparation
  1. In a large bowl, mix together flour, yeast, sugar, and salt until well combined.
  2. Slightly warm the milk, then add it along with eggs and melted butter to the dry ingredients. Mix until a shaggy dough forms.
  3. Knead on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let it rise until doubled in size, about 1 hour.
  5. Prepare the filling by combining chopped peaches, brown sugar, and cinnamon in a bowl.
  6. Punch down the dough and roll it out into a large rectangle.
  7. Spread the peach filling over the dough, leaving a border, and sprinkle with cinnamon-sugar.
  8. Roll the dough tightly from one edge, cut into 12 equal pieces, and place in a greased baking pan.
  9. Cover and let rise until puffy, about 30 minutes. Preheat the oven to 350°F (180°C).
  10. Bake rolls for 25-30 minutes until golden brown.
  11. Whisk together cream cheese, powdered sugar, and milk for the glaze.
  12. Drizzle glaze over warm rolls and serve.
