Step-by-Step Instructions
  1. Preheat your oven to 400°F (205°C).
  2. Slice your zucchini into approximately ¼-inch thick rounds. In a mixing bowl, combine the sliced zucchini with olive oil, salt, black pepper, paprika, onion powder, garlic powder, and ¾ cup parmesan. Toss until evenly coated.
  3. Line a baking sheet with parchment paper and spread the seasoned zucchini evenly across it, sprinkle remaining parmesan over the top.
  4. Roast the zucchini for 6-8 minutes, until tender and golden brown. Broil for an additional 1-2 minutes for extra crispiness, if desired.
  5. Remove from the oven and sprinkle with chopped fresh parsley. Serve hot.
