  • 2 cups Frozen Blackberries Oregon blackberries recommended.
For Garnish
  • 2 tbsp Rosemary Optional garnish.
  • 1 cup Fresh Blackberries Optional garnish.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C).
  2. In a saucepan over low heat, combine frozen blackberries until softened, about 5-7 minutes. In a separate bowl, whisk together ketchup, apple cider vinegar, light brown sugar, black pepper, garlic powder, lemon juice, Worcestershire sauce, and molasses. Combine with blackberries and let simmer for 10 minutes.
  3. Rinse salmon fillet under cold water, pat dry, and line a baking sheet with parchment paper. Place salmon on it, season with salt and pepper, and spread blackberry barbecue sauce over it.
  4. Bake salmon for 10-12 minutes, checking for doneness when it flakes easily with a fork.
  5. Remove from oven, let rest for a couple of minutes, and garnish with fresh rosemary and blackberries before serving.
