Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  2. Combine tahini, oil, maple syrup, and egg (or applesauce) in a mixing bowl until creamy.
  3. In a separate bowl, mix flour, flaxseed meal, baking soda, salt, and cinnamon.
  4. Gradually add the dry mixture to the wet mixture, stirring until a dough forms.
  5. Prepare the jam filling by blending soft dates and ground nuts until smooth.
  6. Roll the nut-date mixture into small balls for the filling.
  7. Take spoonfuls of cookie dough and flatten them, placing filling in the center before wrapping.
  8. Bake the cookies for 10-15 minutes, until edges are golden.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
