For the Shrimp
  • 1 pound uncooked shrimp can swap for chicken, beef, or tofu
  • 3 cloves garlic minced
  • 1 teaspoon cumin or smoked paprika
  • 1 teaspoon chili powder adjust according to spice tolerance
For the Veggies
  • 1 medium bell pepper any color
  • 1 medium avocado or substitute with sour cream or Greek yogurt
  • 2 cups lettuce or greens spinach or kale are good alternatives
For the Dressing
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup fresh cilantro or substitute with parsley
  • 2 tablespoons lime juice or lemon juice in a pinch
  • 1 tablespoon honey or agave syrup
Optional Toppings
  • 1/4 cup queso fresco omit for dairy-free option
  • 1/4 cup additional cilantro for garnish

Method
 

Cooking Steps
  1. Cook the rice according to package instructions, about 15-20 minutes. Combine rice with water and a pinch of salt, then simmer until tender.
  2. Heat canned pinto beans in a small saucepan over medium heat for about 5 minutes and set aside.
  3. Dice the bell pepper, slice the avocado, and chop the greens.
  4. In a skillet, heat olive oil, add minced garlic, and sauté until fragrant. Add shrimp, cumin, and chili powder, cooking until shrimp is pink.
  5. Blend sour cream, cilantro, lime juice, honey, garlic, and salt until smooth. Refrigerate the dressing.
  6. Assemble bowls by layering rice, beans, veggies, shrimp, and drizzle dressing on top, garnished with lime wedges and cilantro.
