  • 1/4 teaspoon Cayenne Pepper can omit for milder flavor
  • 1 teaspoon Cinnamon can substitute with nutmeg
For Overall Flavor
  • 1 teaspoon Salt preferably kosher or sea salt
For Binding
  • 1 large Egg White or replace with aquafaba
  • 1 tablespoon Water essential for foaming

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. In a medium bowl, mix brown sugar, white sugar, cocoa powder, cayenne pepper, cinnamon, and salt.
  3. In a large bowl, whisk together egg white and water until frothy, then add pecans, cashews, and almonds, coating them.
  4. Fold the spice mixture gently into the nut and egg white mixture until evenly coated.
  5. Spread the coated nuts in a single layer on the prepared baking sheets.
  6. Bake for a total of 20 minutes, stirring halfway through for even roasting.
  7. Allow the nuts to cool on the baking sheets before transferring to a serving bowl or container.
