Step-by-Step Instructions for Loaded Potato Skins
  1. Preheat your oven to 400°F (205°C).
  2. Scrub the russet potatoes thoroughly, poke holes in each potato, coat with olive oil, and season with salt and pepper.
  3. Place potatoes on the middle rack and bake for 50-60 minutes until fork-tender.
  4. Slice baked potatoes in half and scoop out most of the flesh, leaving about 1/4 inch intact.
  5. Arrange potato halves, skin-side up, on a baking sheet and bake for another 20 minutes, flipping halfway.
  6. Sprinkle cheddar cheese into each hollowed skin, then return to the oven for 2 minutes until melted.
  7. Top with sour cream and green onions, and serve warm.
