Ingredients
  

For the Salad
  • 1 can Chickpeas rinsed
  • 1 can Navy Beans rinsed
  • 1/2 cup Kalamata Olives sliced
  • 1 cup Cucumber chopped
  • 1/2 cup Vegan Feta Cheese
For the Dressing
  • 1/4 cup Extra Virgin Olive Oil or avocado oil
  • 2 tbsp Maple Syrup or honey for non-vegans
  • 1 tbsp Dijon Mustard or yellow mustard
  • 1 tsp Garlic Powder or fresh minced garlic
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Wash and chop the red onion, bell peppers, and cucumber into uniform bite-sized pieces.
  2. Slice the Kalamata olives into about ½-inch pieces.
Rinsing Beans
  1. Open the canned chickpeas and navy beans, draining well and rinsing them under cold water.
Mix Ingredients
  1. In a large mixing bowl, combine the rinsed chickpeas, navy beans, chopped veggies, and sliced olives, gently folding together.
Make Dressing
  1. In a small bowl, whisk together the olive oil, maple syrup, Dijon mustard, garlic powder, salt, and pepper until smooth.
Combine
  1. Pour the dressing over the bean mixture and gently toss together.
Serve or Store
  1. Enjoy immediately or refrigerate for 30 minutes to allow the flavors to meld.
