Step-by-Step Instructions
  1. In a medium bowl, whisk together the olive oil, minced garlic, lemon juice, dried oregano, ground cumin, paprika, and a generous pinch of salt and pepper.
  2. Coat the chicken thoroughly in the marinade, cover with plastic wrap, and refrigerate for at least 1 hour or overnight.
  3. Combine Greek yogurt, crumbled feta, grated cucumber, minced garlic, dill, mint, lemon juice, salt, and pepper in a bowl and mix until smooth. Refrigerate.
  4. Preheat the grill to medium-high. Grill the marinated chicken for 6-7 minutes per side until the internal temperature reaches 165°F. Let it rest for 5 minutes before slicing.
  5. Warm the pitas on the grill for about 1 minute per side until soft.
  6. Assemble the gyros by placing sliced chicken on warm pita, adding tzatziki, and topping with your choice of toppings. Roll tightly and serve.
