For the Tzatziki

For the Bowl

Method
 

Preparation
  1. In a medium bowl, whisk together the olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes until combined.
  2. Pound the chicken to about 1/2-inch thickness and coat with the marinade. Refrigerate for 30 minutes to 4 hours.
  3. For tzatziki, mix Greek yogurt, grated cucumber, additional lemon juice, olive oil, minced garlic, salt, and dill until blended and refrigerate.
  4. Prep fresh vegetables; wash and chop lettuce, dice tomatoes and cucumber, slice red onion, crumble feta cheese, and chop parsley.
  5. Preheat your air fryer to 380°F. Cook marinated chicken in a single layer for 7-8 minutes or until cooked through.
  6. Let the chicken rest for 5 minutes before slicing into strips.
  7. In each serving bowl, layer rice, top with fresh vegetables, sliced chicken, and tzatziki. Garnish with feta cheese and parsley.
