- In a medium bowl, whisk together the olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes until combined.
- Pound the chicken to about 1/2-inch thickness and coat with the marinade. Refrigerate for 30 minutes to 4 hours.
- For tzatziki, mix Greek yogurt, grated cucumber, additional lemon juice, olive oil, minced garlic, salt, and dill until blended and refrigerate.
- Prep fresh vegetables; wash and chop lettuce, dice tomatoes and cucumber, slice red onion, crumble feta cheese, and chop parsley.
- Preheat your air fryer to 380°F. Cook marinated chicken in a single layer for 7-8 minutes or until cooked through.
- Let the chicken rest for 5 minutes before slicing into strips.
- In each serving bowl, layer rice, top with fresh vegetables, sliced chicken, and tzatziki. Garnish with feta cheese and parsley.
