  • 3 tablespoons Olive Oil or aquafaba for an oil-free version
  • 2 tablespoons Maple Syrup preferably high-quality
  • 2 tablespoons Stone Ground Dijon Mustard
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Black Pepper adjust to taste
  • 1 teaspoon Fresh Thyme or adjust if using dried

Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C). Gather your baking sheets.
  2. Core the apples and chop them into ½” cubes. Slice the carrots on the bias into ¼” thick slices, and dice the onion into ½” pieces. Finely chop the garlic. Place all ingredients into a mixing bowl.
  3. In a separate bowl, whisk together olive oil, maple syrup, stone ground Dijon mustard, salt, black pepper, and thyme until well-combined.
  4. Toss the chopped carrots, apples, onions, and garlic in the dressing until evenly coated.
  5. Spread the vegetable mixture evenly on baking sheets. Roast in the preheated oven for 15 minutes.
  6. After 15 minutes, carefully flip the vegetables and roast for an additional 10-15 minutes until tender and caramelized.
  7. Remove from the oven and let cool briefly. Serve warm as a side dish.
