- Wash and halve eight cups of fresh, ripe plums, removing the pits with care. Tie the reserved pits in cheesecloth if using.
- Place plum halves, sugar, lemon juice, and cheesecloth pouch into the slow cooker. Set to low.
- Cook uncovered on low for 8 to 10 hours, stirring occasionally until thickened and reduced by half.
- Remove cheesecloth pouch. Use a stick blender to puree the mixture until smooth.
- Ladle the hot plum butter into sterilized jars, filling them to ¼ inch from the rim. Process in a water bath.
- Let jars cool completely after processing, then check seals and store in a cool, dark place.
