Preparation
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- In a mixing bowl, combine flour, oats, brown sugar, cinnamon, baking powder, and salt.
- Add melted butter to the dry ingredients and stir until the mixture resembles clumpy wet sand.
- Press two-thirds of the oat mixture into the bottom of the prepared pan and bake for 10 minutes.
- Mix rhubarb, granulated sugar, cornstarch, orange juice, orange zest, and salt in another bowl.
- Spread the rhubarb mixture over the baked crust and sprinkle the remaining oat mixture on top.
- Bake for an additional 30-40 minutes until golden and filling is bubbly.
- Allow cooling in the pan for 10-15 minutes before lifting out with parchment paper.
