Ingredients
  

For the Crust
  • 250 grams Tennis Biscuits Can substitute with graham crackers or digestive biscuits.
  • 125 grams Unsalted Butter Can use salted butter, adjust additional salt accordingly.
For the Cheesecake Filling
  • 600 grams Cream Cheese Let it reach room temperature.
  • 150 grams Castor Sugar Granulated sugar can be used but may alter texture.
  • 3 large Eggs Use room temperature eggs.
  • 1 teaspoon Vanilla Extract Can consider vanilla bean paste.
  • 150 ml Whipping Cream Heavy cream can be used as an alternative.
For the Guava Compote
  • 4 medium Fresh Guavas (for compote) Ensure ripe for best flavor.
  • 100 grams Granulated Sugar Adjust based on guavas' sweetness.
  • 2 tablespoons Lime Juice Lemon juice can be an alternative.
For Decorating
  • 2 medium Fresh Guavas (for decorating) Substitute with strawberries for variety.

Method
 

Preparation Instructions
  1. Preheat your oven to 170°C (325°F). Prepare a 23cm (9 inches) springform pan with non-stick spray and line the bottom with parchment paper.
  2. Pulse the Tennis biscuits in a food processor until fine crumbs. Mix with melted unsalted butter and press into the springform pan. Bake for 10 minutes.
  3. Blend cream cheese and castor sugar in a stand mixer until smooth. Add eggs one at a time, then vanilla extract and whipping cream. Blend until fluffy.
  4. Pour cheesecake filling over the crust. Bake in a water bath for 50 minutes. Cool in the oven for 2 hours.
  5. Cover and refrigerate the cheesecake overnight.
  6. In a saucepan, combine chopped guavas, sugar, and lime juice. Cook until thickened (10-15 minutes). Blend for smoother texture if desired.
  7. Remove cheesecake from the springform pan. Top with guava compote and garnish with fresh guava slices.

Notes
