  • 4 cups Broccoli florets, small

  • 8 oz Alfredo Sauce homemade for a healthier option
  • 1 cup Cottage Cheese well-drained
For the Cheeses
  • 1.5 cups Parmesan Cheese, freshly grated
  • 1.5 cups Mozzarella Cheese, freshly shredded

  • 2 tbsp Olive Oil for sautéing
  • 1 tsp Onion Powder to taste
  • 1 tsp Garlic Powder to taste
  • 1 tsp Salt to taste

Method
 

Preparation Steps
  1. Preheat oven to 375°F (190°C) and grease a 9x13" baking dish with olive oil.
  2. In a food processor, blend cottage cheese until smooth and combine with Alfredo sauce, garlic powder, onion powder, and salt.
  3. Season cubed chicken with onion powder, garlic powder, and salt. Heat olive oil in a skillet, add chicken, and sauté until golden brown and cooked through, about 5-7 minutes.
  4. Evenly layer small broccoli florets across the bottom of the greased baking dish.
  5. Layer sautéed chicken over the broccoli evenly.
  6. Sprinkle Parmesan cheese over the chicken and pour the Alfredo cottage cheese mixture on top, then add shredded mozzarella cheese.
  7. Bake in preheated oven for 35 minutes until bubbling. For a golden crust, broil for 1-2 minutes.
  8. Let it rest for 5 minutes before serving. Garnish with extra Parmesan cheese and herbs if desired.
