  • ¼ cup Chives or Green Onions Finely chopped, shallots can be used as an alternative.
  • 2-3 tablespoons Butter Melted, can substitute with ghee or olive oil.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash the cauliflower and cut it into small florets. Toss the florets with melted butter, salt, and pepper.
  3. Spread the seasoned cauliflower on the baking sheet and roast for 20-25 minutes, stirring halfway through.
  4. Reduce the oven temperature to 375°F (190°C) after removing the cauliflower.
  5. In a mixing bowl, combine sour cream, cream cheese, ¾ cup of cheddar cheese, Parmesan, minced garlic, and a pinch of salt and pepper.
  6. Gently add the roasted cauliflower to the cheese filling, folding carefully until coated.
  7. Grease a casserole dish and transfer the mixture, smoothing the top.
  8. Sprinkle the remaining ¼ cup of cheddar cheese and crumbled bacon on top.
  9. Bake for 15-20 minutes, or until the cheese is melty, bubbly, and golden.
  10. Let it cool slightly, then garnish with chopped chives or green onions before serving.
