  • 1 large broccoli Chopped into bite-sized florets
  • 4 slices bacon Sliced into small pieces
  • 1 cup feta cheese Crumbled
  • 2 tablespoons olive oil For roasting
  • 2 medium shallots Sliced
  • 1 tablespoon lemon zest For brightness
  • 1 cup sourdough croutons For crunch

Method
 

Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and chop the broccoli into bite-sized florets, then spread onto the prepared baking sheet.
  3. Slice the bacon and shallots, then add them to the baking sheet over the broccoli.
  4. Drizzle olive oil over the mixture and toss everything together to coat evenly.
  5. Roast in the oven for 25-30 minutes until the broccoli is tender and the bacon is crispy.
  6. Remove from the oven and sprinkle with feta cheese and lemon zest.
  7. Add croutons just before serving and toss gently to combine.
