  • 1 cups Powdered Sugar sifted
  • ½ cups Unsalted Butter room temperature
  • 1 tablespoon Lemon Zest from organic lemons

Method
 

Steps
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together 2 cups of flour, 1 teaspoon of baking powder, and a pinch of salt in a separate bowl.
  3. Beat together ½ cup of butter and 1 cup of powdered sugar until light and fluffy.
  4. Mix in 1 tablespoon of lemon zest and 2 tablespoons of lemon juice.
  5. Incorporate 1 large egg until fully integrated.
  6. Gradually mix in the dry ingredients until just combined.
  7. Chill the dough covered in plastic wrap for 20-30 minutes.
  8. Scoop and roll dough into 1-inch balls, placing them on the prepared baking sheet.
  9. Bake for 10-12 minutes until edges are lightly golden.
  10. Allow to cool for 5 minutes then dust with powdered sugar before transferring to a wire rack.
  11. Serve once fully cooled.
