Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together gochujang, low-sodium soy sauce, sesame oil, brown sugar, minced garlic, fresh ginger, and rice vinegar until smooth.
  2. Add the chicken thighs to the marinade, cover the bowl, and refrigerate for at least 30 minutes.
  3. Heat a large skillet over medium-high heat, adding neutral oil. Allow the skillet to get hot.
  4. Carefully place the marinated chicken thighs in the skillet, cooking for 3-4 minutes on each side.
  5. Prepare your rice while the chicken cooks, heating pre-cooked rice until warm.
  6. In serving bowls, start with a portion of warm rice as the base. Top with cooked chicken, cucumber, shredded carrots, edamame, and kimchi.
  7. Finish with a sprinkle of sesame seeds and chopped green onions.
