Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the peanut butter, monk fruit sweetener, and vanilla extract. Beat until smooth.
  3. Add the egg and mix until fully integrated. Gradually stir in almond flour, sea salt, and ground cinnamon until a soft dough forms.
  4. Scoop about 1.5 tablespoons of dough and roll into a ball, then place on the baking sheet.
  5. Press down in the center of each ball to form an indentation.
  6. Bake for about 9-10 minutes until slightly browned on the bottom.
  7. Allow cookies to cool for 2 minutes, then press a chocolate wafer or chips into the center of each cookie.
  8. Cool completely on the baking sheet before transferring to a wire rack.
