Coconut Crust
  • 2 cups Desiccated Coconut Ensure it's unsweetened
  • 0.25 cups Monk Fruit Sweetener Can substitute with another low-carb sweetener
  • 2 large Egg Whites
  • 0.25 cups Unsalted Butter Melted
  • 1 tsp Coconut Oil For greasing the pie dish
Creamy Filling
  • 8 oz Cream Cheese Softened
  • 2 cups Heavy Whipping Cream
  • 0.25 cups Key Lime Juice Regular lime juice can be used as a substitute
  • 1 tsp Vanilla Extract

Method
 

Prepare and Bake Crust
  1. Preheat your oven to 350°F (180°C). In a mixing bowl, combine desiccated coconut, melted butter, egg whites, and monk fruit sweetener until evenly mixed. Press firmly into a greased 9-inch pie dish.
  2. Bake for 20–25 minutes, or until the crust turns golden brown and firm. Allow it to cool completely on a wire rack.
Make and Assemble Filling
  1. In a separate bowl, beat softened cream cheese until smooth. Gradually add in monk fruit sweetener, key lime juice, and vanilla extract, whisking continuously until combined.
  2. In another bowl, whip the heavy whipping cream until stiff peaks form. Gently fold it into the cream cheese mixture.
  3. Pour the creamy filling into the cooled crust, spreading it evenly. Cover and chill in the refrigerator for at least 4 hours.
Serve
  1. After chilling, remove from the refrigerator. Top with whipped cream and fresh lime slices before serving.
